  • 1/4 cup unsalted butter, softened

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 15×10-inch jelly roll pan and line it with parchment paper.
  2. Prepare the Cake Batter: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a large bowl, beat the eggs and sugar until light and fluffy. Add the pumpkin and vanilla, mixing until combined. Gradually add the dry ingredients, mixing just until incorporated.
  3. Bake the Cake: Pour the batter into the prepared pan, spreading it evenly. Bake for 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  4. Roll the Cake: Once baked, remove the cake from the oven and immediately invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Starting from one short end, roll the cake and towel together into a tight spiral. Let it cool completely.
  5. Make the Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla, and butter. Beat until smooth and creamy.
  6. Assemble the Roll: Once the cake is cool, unroll it gently. Spread the cream cheese filling evenly over the cake. Roll it back up (without the towel) and place seam-side down on a serving platter.
