Its Halloween and the only day off i have this week. Since i am in a bad mood, i decided to distract myself by preparing some buns for breakfast. I got some walnuts from my mom for this recipie i found on the net during the time i started to bake my own bread.
To be honest the last months i bought bread in the bakery instead of preparing the in my kitchen. Good types of bread take a lot of time specially when they are made with sour dough.
This recipie i want to present today can be made with normal yeast. Its not difficult to make and doenst take too much time in the process.
Here are the ingrediensts that are needed for this recipie
345ml of 3,5% fat milk
330g wheat flour
120g rye flour
10g salt

The dough
Mix all the ingredients including the yeast in your kitchen machine at low speed for 2 to 3 minutes.
After that raise the speed for about 8 to 10 minutes.
The next step is to add the chopped walnuts for a short time

- 1/2 teaspoon salt
- 150 g walnuts (chopped)
- 1 teaspoon cinnamon (optional)
- Milk or egg wash for brushing

- Activate the Yeast: In a small bowl, dissolve the yeast in lukewarm milk. Add one tablespoon of sugar and let it sit for about 10 minutes until frothy.
- Prepare the Dough: In a large bowl, mix the flour, remaining sugar, salt, and optional cinnamon. Create a well in the center and add the yeast mixture, melted butter, and the egg. Mix well, then knead into a smooth dough.
- Incorporate Walnuts: Knead the chopped walnuts into the dough until evenly distributed. Form the dough into a ball and place it in a lightly greased bowl. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
- Shape the Rolls: Turn the dough out onto a floured surface and divide it into equal pieces. Shape each piece into a small roll and place them on a baking sheet lined with parchment paper.
- Second Rise: Cover the rolls and let them rise for another 30 minutes.
- Bake: Preheat the oven to 180 °C (350 °F). Brush the rolls with milk or beaten egg. Bake in the preheated oven for about 20-25 minutes, or until golden brown.
